{"id":3664,"date":"2018-07-31T12:32:35","date_gmt":"2018-07-31T12:32:35","guid":{"rendered":"http:\/\/4estacionesweb.com.ar\/wp\/?p=3664"},"modified":"2018-07-31T12:35:08","modified_gmt":"2018-07-31T12:35:08","slug":"el-chipa-o-la-chipa","status":"publish","type":"post","link":"https:\/\/www.4estacionesweb.com.ar\/wp\/el-chipa-o-la-chipa\/","title":{"rendered":"El Chip\u00e1 o La Chipa"},"content":{"rendered":"<p style=\"text-align: justify;\"><span style=\"color: #000000;\">Es una receta tradicional de nuestra Mesopotamia y el resultado de la uni\u00f3n de dos culturas: la del pueblo Guaran\u00ed y la de los conquistadores espa\u00f1oles que llegaron al noreste de lo que ser\u00eda el Virreinato del R\u00edo de la Plata. <\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">Fueron los primeros colonizadores los que introdujeron, en la zona, el ganado vacuno, el ovino, los caballos y se duda si tambi\u00e9n lo hicieron con las gallinas. <\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">Fueron seguidos por los Padres Jesuitas, encargados de evangelizar toda la regi\u00f3n al catolicismo. <\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">Nac\u00edan las famosas Misiones, en ellas, la alimentaci\u00f3n iba a tener un papel muy importante pues ense\u00f1ar\u00edan a los nativos a consumir varios productos desconocidos para ellos: carne de res, ovina, huevos, leche, quesos, etc. <span class=\"Apple-converted-space\">\u00a0 \u00a0<\/span><\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">Los guaran\u00edes, sobre todo las mujeres, se dedicaban a cultivar ma\u00edz, batatas, zapallo, mandioca, porotos, yerba, etc. Ellas, tambi\u00e9n pescaban, mientras que los hombres eran cazadores. <\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2307\" src=\"http:\/\/revista4estaciones.com.ar\/wp\/wp-content\/uploads\/2016\/07\/chipa-RGB.jpg\" alt=\"\" width=\"563\" height=\"393\" \/><\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">Su base alimenticia eran unos panes y tortas preparados con harinas de mandioca o ma\u00edz.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">Con el correr de los a\u00f1os comenzaron a incorporarles quesos, leche, huevos dando origen al tan conocido Chip\u00e1 o la Chipa, seg\u00fan la regi\u00f3n. <\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">Alimento que desde hace varias d\u00e9cadas se saborea en todo el pa\u00eds y pa\u00edses lim\u00edtrofes y que cuenta con distintas variaciones para su elaboraci\u00f3n.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">Les ofrezco la que aprend\u00ed hace muchos a\u00f1os. <\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">Ingredientes:<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">50 grs. de manteca a temperatura ambiente.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">1 huevo batido.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">250 grs. de almid\u00f3n de mandioca.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">200 grs. de queso tipo Mar del Plata.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">50 grs. de queso Parmesano.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">2 cucharitas de sal.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">\u00bd taza de leche tibia.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">Preparaci\u00f3n:<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">Rallar los dos tipos de quesos y reservar. Sobre la mesada colocar el almid\u00f3n de mandioca en forma de corona. En el centro ubicar la manteca, los quesos, el huevo y espolvorear todo con la sal. <\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">Unir con la mano los ingredientes centrales e ir a\u00f1adiendo el almid\u00f3n de mandioca m\u00e1s la leche tibia hasta obtener un bollo de masa suave. <\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">No hace falta dejarla descansar. Armar peque\u00f1os bollitos y ubicarlos separados en una placa o asadera enmantecada.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">Cocinar en horno moderado durante 20 minutos o hasta que est\u00e9n dorados.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">Servir tibios.
